Sugar-Free Crock Pot Apple Butter

I used to make apple butter for my family of nine—even in the crock pot sometimes. You know…all of the “methods.” The peel everything then use an immersion blender method. The run everything through a hand crank thingy method. The cook-your-apples-in-apple-cider method (my former favorite way). Crock pot. Stove top. And more.

 

But I have never had such yummy, perfect, sweet apple butter as this recipe. I first found the method at The Busy Baker. I was sure that it wasn’t right—no apple cider or juice while cooking?

There is no doubt in my mind that in the three years that I have been baking low carb, I have made at least twenty different low carb biscuit recipes! Agghh…..that is a lot of expensive flour and even more time than I care to think about.

 

The bottom line is that we are picky! We are used to home cooked/home baked foods with white and wheat flours. Casseroles, roasts with potatoes, homemade pizza, lasagna, spaghetti casseroles, and pot pies were all dishes in my repertoire of recipes in thirty-four years of cooking and baking for a family of (eventually!) nine on one income.

I am a picky eater….my mom tells the story of when I was six years old, and I sat at the table for hours rather than eat four peas that she was trying to make me eat. (I understand that I never did eat them, which might be why I hate peas to this day…)

Before I began eating healthier to keep from going from pre-diabetic to full-blown diabetic, I ate like a ten year old. I rarely ate fruits and vegetables (though I did fix them for our family religiously!). I loved Diet Coke, French fries, pizza, cream-filled donuts, and chocolate chip cookies.
