There is no doubt in my mind that in the three years that I have been baking low carb, I have made at least twenty different low carb biscuit recipes! Agghh…..that is a lot of expensive flour and even more time than I care to think about.
The bottom line is that we are picky! We are used to home cooked/home baked foods with white and wheat flours. Casseroles, roasts with potatoes, homemade pizza, lasagna, spaghetti casseroles, and pot pies were all dishes in my repertoire of recipes in thirty-four years of cooking and baking for a family of (eventually!) nine on one income.

When I first began low carb baking seriously three years ago, I had way more failures than I did successes. No one flour seemed to make anything edible—especially for my sons and husband.
Almond flour was too heavy. I didn’t understand how much liquid/how many eggs to use with coconut flour—plus the texture was just off when I followed recipes using solely coconut flour. Don’t even get me started on the recipes I tried using straight flax or oat fiber.
Then I started reading about low carbers who were having success at combining non-grain flours. Caroline, from All Day I Dream About Food, and other healthy recipe bloggers used two thirds to three fourths almond flour and the remainder of coconut flour quite often in recipes.

Need an activity for a group of adults who want cool prizes? Trying to phase out of stockings for your older kids and into something equally as festive but a little less expensive (especially if you find yourself getting real gifts that cost a lot for stockings). Want to eliminate a gift exchange but still have prizes for people to take home? Whatever scenario—the Plastic Wrap Gift Ball Game might just be the answer!
We do this fun activity with our young adult children on Christmas Eve, and it would also be a great activity for a youth group, class party, family get-together, office party—most anywhere! It is simple to make (honest!) and fun for a crowd.

HEALTHY! Cream Cheese Dessert Base {Low Carb, THM, Sugar-Free}

Cream cheese. Creamy desserts. Cheesecake. Frostings. Fruity concoctions with mounds of creamy goodness. Peanut butter, chocolate, and nuts, oh my!
Those could be tags for the first mix that I am creating a Healthy Mix e-book for: Cream Cheese Dessert Base. I have been busily testing recipes for this e-book (and eating the goodies!) for months now. While the entire e-book is not ready yet, I will share with you some of the deliciousness that it contains to get you started in creating desserts from this amazing dessert base.

Funny thing about low carb/healthier cooking and baking…sometimes I feel like my daily goal is to make things taste as normal as possible. That is, figure out a way to make the dish not taste low carb—even though it is.

I am a picky eater….my mom tells the story of when I was six years old, and I sat at the table for hours rather than eat four peas that she was trying to make me eat. (I understand that I never did eat them, which might be why I hate peas to this day…)
Before I began eating healthier to keep from going from pre-diabetic to full-blown diabetic, I ate like a ten year old. I rarely ate fruits and vegetables (though I did fix them for our family religiously!). I loved Diet Coke, French fries, pizza, cream-filled donuts, and chocolate chip cookies.
